I will post up some recipes that I have either developed or found that will help in the journey towards a fiber rich weightloss experience.  I hope this will be a help to you in your discovery.

Kirk’s Roasted Vegetables

Try to cut up each vege in 1” cubes uniformly

2 potatoes cubed
2 sweet potatoes cubed
1 eggplant cubed
1 onion sliced
1 squash cubed
1 carrot cubed
1 red pepper
1 green pepper
Extra Virgin Olive Oil
Sea Salt / Pepper

Place all veges on a flat baking dish.

Cover with olive oil. Salt and pepper.

Bake for 30 min. Serve Hot!  YUM!

Simple Raw Collard Greens

I had a desire for these green vegetables while traveling.  I had never eaten collards raw before, and neither did my friends.  But when I created this I knew that this would be good. And it was.

Collard greens are heartier than lettuce, spinach or kale, so you will need to complete the recipe, especially letting it sit in the refrigerator.  The leaves will get pliable and softer.  (But if you like, you can eat it right after you toss it)

2 bunches Collard Creens

1 cup Paul Newmans Organic Italian dressing

2 cloves Garlic

Herbamere sprinkle (or Mrs. Dash)

Pepper

Wash and De-vein the greens

Pat dry with paper towel

Stack greens uniformly together in 3 or 4 piles

Roll up each pile in cigar type rolls (real tight)

Take a kitchen knife and start cutting greens in ½ inch strips.

Place in a large salad bowl

Chop up garlic and add to greens

Cover with organic dressing

Toss until all covered

Sprinkle to taste with Herbamere (or Mrs. Dash) and pepper

Cover with wrap and refrigerate for 15 – 25 min

Serve with Wheat crackers.   Ummmm Good!
